When I need an easy dinner that feels cozy and filling, I almost always turn to a casserole. It's a great way to clean out my fridge, they're easy to make ahead, and I can often have our entire dinner ready in one dish. Many versions (especially in the Midwest where I grew up!) rely on processed ingredients or canned soups, but if you've been here a hot minute, you know mine are all from scratch -- without being complicated.
